Burger dinner

Made a turkey burger tonight that had no picture so I HAD to make it   lol. It bugs me when recipes don't have photos. This came out tasty, but a little dry. I think next time I make this, I'll give honey mustard a try in this and if I remember, serve this on a pretzel bun. Side dish was freshly juiced beet, sweet potato and carrot drink

Da Weird cookies!

I love to make unusual recipes. I find it a challenge and sometimes I run across some real gems. The weirder the better. Well I sorta draw the line at offal I am not THAT adventurous.. yet.

Anyway, a while ago I ran across this recipe Grain-free Peanut Butter Chocolate Chip Cookie Dough Balls at Texanerin Baking . I have only made one flour free cookie recipe before and was curious. The picture she had on her site looked awesome so I pinned it to try.

One thing I was waiting for was my PB2. I use this product in almost all my recipes with peanut butter so I wanted to try it in this one. Well I got my new shipment this week so it was time to try it

Yummo looking,  huh? :D  Yeah they tasted pretty good. I was happy with the performance of the PB2 in this. Only other change I made was add a few more chocolate chips.. well just because.  I look forward to trying more bean based cookie recipes... you don't taste the beans and the cookie stay gooey.  Protein in cookies? Yeah.. I'm in!!

Progresso - Love affair or not?

Another product I got to try in September was Progresso Recipe Starters . We were sent one of each flavor: Creamy Parmesan Basil,  Creamy Portabella Mushroom, Creamy Roasted Garlic,  Creamy Three Cheese and Fire Roasted Tomato.

The first recipe I made was Twice-Baked Potato Pizza

I enjoyed this. Different from usual pizza, but I really don't think the sauce itself added much to the dish with all the other flavors.

The next one I made was Crispy Garlic-Parmesan Chicken


The sauce was tasty but I did broil the chicken a few minutes to get browned...looked a bit anemic before that.

Next was Easy Weeknight Bacon Mac 'n Cheese


This one was good.   I did healthi-fy this one up using laughing cow cheese, turkey bacon... etc. I hadn't had Mac and Cheese in years so this was a treat

Next was Cheesy Egg Breakfast Tacos


I made this recipe twice... once with the cheese sauce and once without. The cheese sauce is so bland, I really didn't notice it missing so while the recipe itself is good, the recipe with the sauce.. not so much.


Then I made this one -Progresso® Creamy Chicken Piccata


This one was a pleasant surprise. I really liked this one a lot and this one I'll make again. The lemon was delightful.


I have some leftover basil sauce that I put in the freezer so I'm going to go give this one a whirl  Basil-Chicken Thai Noodles  No one has made it so I'll be the guinea pig!  Here it is


This recipe, as it is written needs work... not enough lime, not enough soy sauce and no heat! It's a bunch of peanut butter and chicken flavored noodles. I added carrots, snow peas, red peppers, more lime and more soy and it was MUCH better.

So my verdict on the sauces - some are usable, some add nothing.  The recipes - all of them needed tweaking

I love breakfast and Al Fresco products

So as an Allrecipes.com Ambassador, we get to try out some neat products. In September, we got to try Al Fresco chicken sausages and meatballs. I made the following recipes Garlic Chicken Sausage and Summer Vegetable Saute

We were also asked to create a recipe using Al Fresco products and this is where my love of breakast comes in. I made yummy Al Fresco Mini Pasta Frittatas

These came out really well and I am sure I'll make them again.  I made a whole pan of them and popped leftovers in the freezer for weekday breakfasts.  Gotta get my protein in the AM!! I bought another package of the Tomato & Basil Meatballs this week so I'll be using them to experiment with more recipes. I think these would be great in a pasta dish, in sandwiches..I'm going to try incorporating these into a dessert... just for fun!
