I’ve always loved kitty cats. Ever since I was a child, I’ve
adored them. I had my first kitty when I was in I think third grade and have
had cats almost all my life. My most recent furball came into my life in 1999.
I went to a pet rescue event, just to look. My most recent furry companion had
passed away about 6 weeks earlier and I was in the contemplating stage of
finding a new baby to bring home. There were lots of kittens and the first one
I held was a calico. She was so tiny and scared but just adorable. I looked
into the cage she had come from and saw this little cutie attacking imaginary
critters. There was no fear in this kitty. I asked to check that kitty out and
picked her up. She still had no fear. Started play attacking my collar and just
enjoying herself. Then she fell asleep
in my hands. With both hands together, she fit right in them. Well that was it;
I had fallen in love with this little dynamo. She was still being bottle fed by her foster
mom and had to be spayed, so I had to wait about three weeks to bring her
home. This gave me time to “kitten
proof” the house well.
I brought her home and had forgotten how energetic tiny
kittens were.. she tired me out! We
quickly bonded and I become her person and servant. J Over the years we settled
into a routine and were best friends. I became very ill a year or so ago and
had to have multiple surgeries and trips to the hospital. I worried about her
but luckily had a wonderful sitter who came to the house to feed her and clean
her litter box. When I finally came home for good, she stuck to me like glue. I
got so worried about her eating enough as she never left my side.. it was
awesome to have her nearby. Having a pet can help lower your blood pressure and
has all sorts of other beneficial side effects, I am sure her presence helped
me heal. After my surgeries I had to
change some of the foods I was eating.. couldn’t eat the way I did before so I
started eating a lot of eggs and egg whites. One of the things I liked to make
were breakfast casserole type dishes – strattas, frittatas etc One of my favorite is a deep dish
breakfast pizza made with Sargento Mozzarella cheese. You don’t need too much
to get a delicious flavor. You can use any kind of Sargento cheese in this,
with any meat and veggie combo and get something delicious for breakfast, lunch
or dinner. It’s a very flexible recipe that I can change around to use whatever
leftovers are in the fridge.
Sargento just published my recipe in their digitial cookbook - http://www.sargento.com/recipes/2040/deep-dish-breakfast-pizza/
